| Lettuce | |
| 4 | Boiled prawns (de-pooed and de-shelled) |
| Sweet Thai basil | |

| 1 Cup | White sugar |
| 1 Cup | White vinegar |
| 1/2 Cup | Water |
| 1/2 Tsp | Salt |
| 30g | Coriander (whole, include root) |
| 30g | Green bird’s eye chilli |
| 30g | Garlic |
- On a low heat add sugar, vinegar and water to a pot. Boil until the sugar is dissolved. Put to one side to cool
- In a blender add coriander, chilli and garlic. Add this mix to the cooled pot from above. Put the dipping sauce to one side
- Put the lettuce, sweet basil, mint and prawns along the centre of a sheet of square of rice paper
- Roll the rice paper around the contents of the rice paper. Cut into bite size portions and present with dipping sauce
