Eastern style spicy and sour dipping sauce

| 100g | Tamarind Juice | 
| 80g | Fish sauce | 
| 80g | Palm Sugar | 
| 2Tab | Chilli Powder | 
| 1Tab | Aromatic sticky rice powder | 
| 6g | Saw Coriander, finely chopped | 
| 35g | Red onion, finely chopped | 
| 6g | Chinese coriander, finely chopped | 
| 6 | Kaffir lime leaves, stem removed and very finely chopped | 
- In a pot bring the tamarind and palm sugar to the boil. Boil until all the palm sugar is dissolved. Put to one side to allow to cool slightly
 - When cooled enough that you could put your finger in the mix add the sticky rice powder and stir in
 - Add chilli powder, saw coriander, Chinese coriander, fish sauce and red onion and stir in. move to a serving dish
 - Place finely chopped kaffir lime leaves to top of sauce
