Deboned, head off and body cut into \u2018calamari\u2019<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">5<\/td>\n<td width=\"308\">Bird\u2019s eye chillies<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1<\/td>\n<td width=\"308\">Shallot, finely cut<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">2<\/td>\n<td width=\"308\">Kaffir lime skin strips, finely sliced<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">3 Tab<\/td>\n<td width=\"308\">Lime juice<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">4<\/td>\n<td width=\"308\">Galangal ginger slices<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1<\/td>\n<td width=\"308\">Lemon Grass, 4cm lengths<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1.2 Ltr<\/td>\n<td width=\"308\">Chicken stock<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1 \u00bd Tab<\/td>\n<td width=\"308\">Fish sauce<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ol>\n<li>Smack lemon grass with the back of a reasonably heavy knife. Put to one side<\/li>\n<li>In a mortar smash chillies (don\u2019t kill them, just expose the meat). Put to one side<\/li>\n<li>In the mortar, smash the shallots (as above) and put to one side<\/li>\n<li>Put stock in a pot and over a medium heat bring to the boil<\/li>\n<li>Add lemon grass, ginger, mushrooms, kaffir lime and shallots<\/li>\n<li>Add fish to the pot and (without stirring) bring to the boil<\/li>\n<li>Add fish sauce and turn heat down.
