Taste and adjust. Put to one side<\/li>\n<li>Put the pork in a hot pan and cook until the outside is caramelised<\/li>\n<li>Take the pork out of the pan and cut into 5mm strips<\/li>\n<li>Put strips back into pan and complete cooking. Place the pork on the plate with the dipping sauce. Sprinkle a little sticky rice four on the sauce for taste.<\/li>\n<\/ol>\n<p><strong>Sticky Rice flour<\/strong><\/p>\n<p>You can buy sticky rice flour or you can make it yourself<\/p>\n<table>\n<tbody>\n<tr>\n<td width=\"308\">4<\/td>\n<td width=\"308\">Kaffir lime leaves<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">4g<\/td>\n<td width=\"308\">Galangal ginger<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">130g<\/td>\n<td width=\"308\">Sticky rice (uncooked)<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ol>\n<li>Combine Kaffir, galangal and sticky rice in a wok<\/li>\n<li>Cook until the rice is nearly black<\/li>\n<li>Pour into a mortar and grind until it is mostly powder.
