Used to give colour)<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1<\/td>\n<td width=\"308\">Garlic<\/td>\n<\/tr>\n<tr>\n<td width=\"308\"><\/td>\n<td width=\"308\">Coriander leaves<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">2<\/td>\n<td width=\"308\">Spring onion (cut into 3cm lengths)<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">Seasoning<\/td>\n<td width=\"308\"><\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1 Tab<\/td>\n<td width=\"308\">Fish Sauce<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1 Tab<\/td>\n<td width=\"308\">Lime juice<\/td>\n<\/tr>\n<tr>\n<td width=\"308\">1.5 Tab<\/td>\n<td width=\"308\">Sugar syrup<\/td>\n<\/tr>\n<tr>\n<td width=\"308\"><\/td>\n<td width=\"308\"><\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<ol>\n<li>Put eggs into warm water that is just deep enough for the top 2mm of the egg to be showing out of the water<\/li>\n<li>Turn the eggs for the first few minutes to get the egg yolk in the middle of the egg<\/li>\n<li>Cook for 10 minutes. Shell when completed<\/li>\n<li>While the eggs are cooking, over an open flame, roast the eggplant until the skin is black and burned<\/li>\n<li>Under cold running water removed the burned skin and put to one side<\/li>\n<li>Roughly pound garlic and chillies in a mortar to combine. Put to one side<\/li>\n<li>In a mixing bowl and combine fish sauce, lime juice, and sugar syrup and mix well.<\/li>\n<li>Add drained pork and \u00bd the dried shrimp, shallots, red chilli, spring onion and chilli\/garlic mix and combine<\/li>\n<li>Cut eggplant into \u00bd and then each \u00bd into thirds.
