Retain the rest of the fish sauce if require once tasted the salad.<\/li>\n<li>In a wok, bring the stock to the boil<\/li>\n<li>Add chicken and stir until cooked<\/li>\n<li>In a large bowl mix chicken, seasoning, spring onions, shallots, coriander, chilli pepper and most of the toasted rice<\/li>\n<li>Season and taste. Add more fish sauce\/seasoning if required<\/li>\n<\/ol>\n<p>NOTES:<\/p>\n<p>To toast sticky rice you put the rice in a frying pan without any oil. You toast the rice until it is very brown, don\u2019t worry about the occasional burnt one.
